The Wichtel brewery in Schwäbisch Gmünd will soon open its doors again and thus bring back a piece of gastronomy history. After almost two years of closure, a new operator has been found to take over the old Paulaner inn on the market square. The previous restaurateur Arijan Ljajka filed for bankruptcy at the beginning of 2024, which resulted in the closure of the traditional establishment and surprised residents. The owner Helmut Maile was equally surprised by the prompt closure and is now hoping for a positive turnaround with the new tenant.
The Paulaner Wirtshaus, a historic building that was built in 1758, has a long history as a meeting place for connoisseurs and friends of Swabian gastronomy. The location at Marktstraße 11 seems ideal for a comeback, and the Wichtel brewery brings a breath of fresh air to the inn.
Who is behind the Wichtel brewery?
The Wichtel brewery is not just a brewery, but is an established home brewery that is very popular in Schwäbisch Gmünd and beyond. Originally founded in Ditzingen in 1989, it has been attracting beer lovers since 2002 with a location in Stuttgart-Feuerbach. There are also branches in Böblingen and Ditzingen, while the Esslinger Brauhaus had to cease operations in 2018. The Wichtel brewery has recently invested a lot in new locations - openings in Stuttgart-Bad Cannstatt and Stadtallendorf near Marburg followed in 2022.

In addition to the breweries, the Wichtel Brewery offers exciting brewing tours and brewing seminars under the Wichtel Academy label, with beer tastings also on the program from 2024. The planned small experimental brewery in Stuttgart-Bad Cannstatt will offer exciting opportunities for ambitious hobby brewers.
Prospects for the new operator
The new operator of the Paulaner inn, whose name has not yet been announced, plans to continue the tradition and craftsmanship of the Wichtel brewery in Schwäbisch Gmünd. He probably needs a good hand to attract guests with traditional Swabian dishes and an enjoyable selection of beers. The reopening of the inn could not only provide a positive economic stimulus for the region, but also bring life back to the market square.
It remains exciting to see how the gastronomy scene in Schwäbisch Gmünd will develop and whether the Wichtel brewery can build on the success of its other locations. The residents and beer lovers are definitely looking forward to the opening!
