In the idyllic town of Schotten im Vogelsberg, a gastronomic gem has established itself in recent years: the “VulkanWohnzimmer”, which is run by the couple Jürgen Schwab and Olympia Borys. For seven years, the two have been enchanting their guests with a passion for regional food that has its own charm. They took over the historical one Lenzenhof, which has been on Vogelsbergstrasse in Schotten since 1720. The building was completely renovated within just four months and opened in 2019.
In terms of kitchen technology, Schwab and Borys do not have a traditional background: the two previously came from quality management and process analysis. But they bring their experience into gastronomy, which is reflected in the quality of their food. The “VulkanWohnzimmer” offers space for around 40 guests in the restaurant and in the cozy beer garden, where you can relax with regional and seasonal delicacies.
Regionality and sustainability in focus
The trend towards regionality is very important in the “VulkanWohnzimmer” – the ingredients come exclusively from local suppliers. Schwab works with organic farmers in the area and sources fruit and vegetables from part-time farmers. This concept has not only appealed to local guests, but also to District Administrator Dr. Jens Mischak was convinced, who paid a visit to the gourmet place and expressed his enthusiasm for what was on offer.

Schwab and Borys' visions reflect these developments by not only focusing on traditional dishes, but also appealing to curious and health-conscious customers. Their passion and close collaboration with local farmers meant that the “VulkanWohnzimmer” has a special place in the region.
