The culinary year 2025 brings fresh stars in the gastronomic sky for Baden-Württemberg. In the coming year, the number of starred restaurants will remain constant at 73, which means for the region that the drivers of gourmet cuisine will continue to occupy a brilliant place on the culinary market. This year, three new star restaurants were awarded: The “Kaisersaal” in the Hotel Kaiserhof in Ravensburg, “Raro” in the Mühlenhof in Schriesheim near Heidelberg and the “Hawara” in Freiburg im Breisgau. The latter also receives a green star, which stands for sustainability. A great success for the gourmet scene, as Merkur reports.
The Baiersbronn region in the northern Black Forest in particular shines with its high density of star restaurants. Here, both the “Bareiss” and the “Schwarzwaldstube” retain their three stars, while the restaurants “1789” and “Schlossberg” each claim one star. With a total of seven star restaurants, Stuttgart remains the city with the most in the southwest of the country. There is an up-and-coming gourmet hotspot in Freiburg that now has five star restaurants - including the “Wolfshöhle”, “Eichhalde”, “Colombi Restaurant Zirbelstube” and “Jacobi”, the latter of which received its first Michelin star after just one year and also has a Green Star for sustainable cuisine.
Stars and numbers: A look behind the scenes
This year the Michelin awards ceremony took place in the evening in Frankfurt, at 6 p.m. The Michelin Guide, which has been awarding stars for excellent cuisine since 1926, has further developed its criteria over the years. One star stands for cuisine full of finesse, two stars for top-class cuisine that is worth a detour, and three stars mean unique cuisine that is worth a trip, as SWR explains.
Nevertheless, there were also setbacks in the global star ranking. The two-star restaurant “Mühle” on Schluchsee had to give up one star without the reasons being disclosed. The previous two-star restaurant “SEO Küchenhandwerk” in Langenargen is no longer included in the guide because it has closed. Together with the restaurants “Ritzi Gourmet” and “MARKOS” in Weingarten, which were also removed from the guide, this means that despite these losses, Stuttgart still holds the top position with its seven star restaurants. The gastro-cultural landscape continues to be shaped by clarifying tendencies, which the Michelin Guide observes through ongoing anonymous visits.
A look at the region
Don't forget other highlights in the region: In Donaueschingen, the star restaurants “Ösch Noir” shine with two stars and “die burg” with one star. In addition, nine restaurants in Upper Swabia and Lake Constance received stars, while two lost their awards. A very special place is the “Ophelia” in Konstanz, which boasts itself as the only two-star restaurant on the German shore of Lake Constance. Douce Steiner from “Hirschen” in Sulzburg is also worth mentioning in the culinary scene, as she is Germany’s only two-star chef who tirelessly supports young talents on their way to awards.
The gastronomic development in Freiburg and the surrounding area promises to continue to set exciting highlights. The fact that stars are considered an important award for top chefs worldwide should not be underestimated. The know-how of “Mentor Chef” Claus-Peter Lumpp, who works at Bareiss and is dedicated to supporting young chefs, enjoys similar respect.
