Something is happening in the pizza sector in Neuhausen near Metzingen - and the whole of Lower Saxony can be excited. 26-year-old student teacher Jonathan Brodbeck has started his own pizza catering business. What makes him special? A deep passion for baking that he inherited from his family, especially his grandmother. Their tradition of baking not only inspired Jonathan, but also taught him that good food takes time and dedication. With his catering he now has the opportunity to present the fruits of his labor at the wine festival in Neuffen-Kappishäuser.

Jonathan is responsible for the pizza dough while his brother helps him at the oven. The rest of his family and friends volunteer to help him at the pizza stand, making the whole thing a real community project. The response to the wine festivals was consistently positive. Guests praise the toppings and strong base of his pizzas, which they find exceptional. This enthusiasm is no coincidence - Jonathan has worked for over a year to create the perfect dough. He uses a “Biga” dough recipe in which the yeast dough matures in the refrigerator for up to two days, giving it its intense flavor.

The art of pizza and its challenges

Of course, the choice of ingredients is crucial. Jonathan relies on high quality ingredients to ensure that every pizza offers a real taste experience. But that's not all: he even purchased an industrial kneading machine to meet his requirements and to be able to offer the pizzas of the best quality. “A good pizza takes time, high-quality ingredients and passion,” he emphasizes. In the fast-paced world of catering, this is a philosophy that sets him apart from many others.

A business with potential: According to the website Statista, the catering industry in Germany includes over 12,100 organizers and generates sales of almost 13 billion euros annually. Jonathan plans to give his pizza catering further impetus in the coming months. On average, he already has two events per month on his calendar.

A changing pizza culture

Customers' culinary preferences are constantly changing - and this also influences pizza culture. For example, while Seattle is known for a variety of pizza styles, including Neapolitan pizza and New York-style pizza slices, for Jonathan it is important to focus on local conditions and tastes. His goal is not only to rely on the classic toppings, but also to explore the variety of ingredients so that there is something for every taste.

As a future high school PE, geography and NWT teacher, Jonathan is determined to balance his two passions - education and pizza. that his pizza catering is not only a delight, but also lays the foundation for a new gastronomic tradition that is appreciated in Neuhausen and beyond.
