Schliersee: Slyrs opens new sustainable whiskey distillery!
A new era in whiskey production will be heralded in Neuhaus on June 26, 2025. Slyrs Distillery, known for its exquisite single malt whisky, is opening a state-of-the-art new facility, expanding production capacity from 90,000 liters to an impressive 400,000 liters of neutral alcohol. This investment of 15 million euros not only shows the company's growth trajectory, but also a strong commitment to sustainability.
The new production hall, which was built by 14 different trades at the same time, uses innovative cooling elements that reduce water consumption by up to 20,000 liters daily. Managing director Hans Kemenater emphasizes that the facility will be largely energy self-sufficient, with an energy concept that integrates a photovoltaic system and a heat pump system. This corresponds to the trend in the whiskey industry to increasingly switch to environmentally friendly practices, as reported by nachhafte-produktion.de.
Advantages of the new facility
The Slyrs Distillery has been active since 2007 and has now produced 13,500 brews and over 2.8 million liters of New Make. Thanks to the new fermentation tanks, which now hold 10,000 liters, the whiskey production processes can be made more efficient. During the eight-month construction period, the company worked hard to increase production to compensate for the downtime. What is particularly noteworthy is that the existing adventure distillery remained open regularly during the construction work and featured a new multimedia visitor tour and the “Genussverweilerei” restaurant.
The quality of Slyrs whiskey was recently recognized with a gold medal for the Single Malt Whiskey Classic and a silver medal for the Pedro Ximénez Cask Finish at the Spirits Selection by CMB. This is further evidence of the high level of products manufactured at the new facility.
Sustainability in focus
The Slyrs Distillery not only focuses on higher production capacity, but also on sustainable practices. Given the challenges in whiskey production, such as high water and energy consumption as well as a significant ecological footprint, the company shows strong environmental awareness in collaboration with research partners at TU Dresden. Whiskey producers are increasingly taking steps to minimize their environmental footprint as consumers increasingly seek ethical and environmentally friendly products, informs whiskyexperts.net.
To reduce water consumption, Slyrs implements modern water management practices and promotes local, organic raw materials. These approaches not only support local agriculture, but also contribute to the health of the ecosystem. The distillery highlights that the whiskey is produced with Bavarian grain and pure Alpine spring water - all made and matured on site.
The commitment to sustainable practices is not only a response to global discussions, but also a strategic decision to secure the future of the whiskey industry. Transparent and responsible manufacturing methods build trust among consumers and allow the industry to redefine its heritage with a sense of environmental responsibility.
With this new distillery, Slyrs is setting standards, not only in whiskey production, but also in its responsibility for the environment and the region. These developments definitely arouse curiosity and give fans of Bavarian whiskey art hope for future delights.
