Successful couple in Vogelsberg: regionality as a secret recipe!
In the picturesque town of Schotten im Vogelsberg, the “VulkanWohnzimmer” has developed into a real attraction for connoisseurs over the last seven years. Jürgen Schwab and Olympia Borys, originally from the area of quality management and process analysis, have won the hearts of many guests with their gastronomic concept. But the path there was anything but straight. In 2019, the two took over the historic Lenzenhof, one of the oldest half-timbered houses in Schotten, and renovated it with great attention to detail. Today the “VulkanLiving Room” not only offers space for around 40 people, but also an inviting atmosphere with old beams and cozy furnishings. A beer garden invites you to dine outside on nice days.
But what makes the “Volcano Living Room” so special? In addition to the warm welcome, the focus here is on the ingredients. The couple specializes in regional and seasonal products and sources their food directly from organic farmers in the area. “We rely entirely on handmade quality,” explains Jürgen Schwab. The dining offering consists of organic, regional and seasonal dishes paired with cultural events and wine tastings where a sommelier guides guests through the flavors. There is also the VulkanRoasting factory, which offers self-roasted organic coffee from Ethiopian coffee farmers.
The trend towards regionality
The demand for regional and seasonal ingredients is growing - this is not just a trend, but a clear expectation of guests. According to a nutrition report from the Federal Ministry of Food and Agriculture (BMEL), 66% of those surveyed attach great importance to regionality when they eat out. Even 50% stated that they go to restaurants more often that offer more regional food. It is therefore no wonder that incorporating local ingredients into menus is considered a key success factor for restaurants. And this is exactly where Schwab and Borys’ concept comes into its own. Using local products not only improves taste, but also reduces transport emissions and ensures shorter delivery routes, which is a significant advantage in times of climate crisis.
The “VulkanWohnzimmer” has understood how to translate the wishes of its guests into a successful gastronomic concept. The menus are constantly adapted to seasonal availability, and the focus on local suppliers ensures that the freshness of the ingredients is noticeable. Regionality is not just seen as a marketing tool, but as a real obligation that can also promote related business success.
A place for experiences
The “VulkanLiving Room” not only impresses with its culinary experiences, but also with a variety of events. Whether private parties, coffee seminars or cultural events – there is something for everyone here. The flexible design of the rooms makes the restaurant the ideal venue for seminars and training courses. When the weather is nice, the outdoor area with its special ambience by the moat ensures unforgettable moments.
With their concept, Jürgen Schwab and Olympia Borys are working to strengthen regional awareness and make a valuable contribution to sustainable gastronomy that is firmly rooted in the region. The combination of excellent cuisine and a clear focus on regionality makes the “VulkanWohnzimmer” a real place for gourmets and latecomers to modern gastronomy.
