On June 23, 2025, the traditional butcher shop “Hartwiger & Petersen” in Sohlingen will celebrate its 100th anniversary. The history of the family business began in 1925 when Franz Breuker laid the foundation stone, and since then the butcher shop has been passed down from generation to generation. A significant moment of celebration was the presentation of a certificate of honor from the Hildesheim-South Lower Saxony Chamber of Crafts to Dirk and Theo Petersen, who took over responsibility for the business.
The story about the company's development was particularly moving. After Paul Hartwiger's death in 1976, Käthe and Theo Petersen took over the business and made numerous improvements, including expanding the sausage kitchen. The Petersen family's commitment and expertise led to the next generation also entering the butchery profession; Daughter Michaela as a food technician and son Dirk, who has been working as a master butcher since 1998.
A regional highlight
The butcher shop, which is now located at Kurzen Straße 17 in Uslar, has established itself as a real attraction in the region. With a wide range of fresh meat and sausage products, the company has earned an excellent reputation based on fair prices, friendly service and, above all, the quality of the products. “The onion meat is one of the best far and wide,” say the numerous satisfied customers.
Dirk Petersen's business was valued not only for its quality, but also for its commitment to the community. Mayor Torsten Bauer conveyed the congratulations and praised the company's importance for the region. The guild's chief master Ulrich Schonlau also raved about the responsibility the company takes on for its employees and its ability to successfully overcome bureaucratic hurdles.
Tradition and innovation
The history of the butcher trade, in which the “Hartwiger & Petersen” butcher shop is rooted, goes back to ancient times. While meat processing used to be carried out directly by livestock farmers, a separate market for meat supply developed in the Middle Ages, which is still noticeable today. The work of the butcher shops not only requires technical skills, but also a deep understanding of the agricultural partners. In this context, Dirk Petersen expressed his thanks to the farmers who are his partners in the value chain.
“Hartwiger & Petersen” is perceived not just as a butcher shop, but as a piece of history that deepens the connection between tradition and modernity. Dirk Petersen has been running the company since 2001 and ensures that the company remains fit for the challenges of the next 100 years. During this time, his son Jan also worked in the company as a journeyman butcher, continuing the family tradition.
