One of the special dishes is the fried thymus gland from a young horse, which is served together with pickled cucumber and freshly baked challah. Mysliwiec emphasizes that horse meat in Poland is not only a culinary delight, but also symbolizes honest meat that should be shown respect and gratitude.
Another highlight of the menu is the pie made from veal brains and butter, combined with white chocolate cream and nut crumble. These combinations show that offal is rich in vitamins, minerals and proteins and is becoming increasingly popular.
