An impressive spectacle recently took place in the Etschberg village community center: Louisa Bader and Justin Fauß conjured up a whopping 250 liters of pea stew for the numerous participants of the state exercise day. Around 450 firefighters were on site and enjoyed the tasty meal, which was prepared in four large 100 liter pots on gas stoves. The volunteer chefs had their hands full, but the teamwork and the stomach-churning delights were their reward.
The pea stew, which was cooked according to a Bundeswehr recipe, was characterized by its easy preparation and hearty taste. With a preparation time of around 70 minutes, the two chefs conjured up a hearty and nutritious dish that everyone enjoyed. Tomatoes and complications were better left to top cuisine; this was about tried and tested and good things. A classic that warms people's hearts on cold days!
The recipe for the classic
If you want to get hands-on, you can try out the following ingredients and the preparation process. According to chefkoch.de you need:
- 500 g geschälte Erbsen
- 100 g Knollensellerie
- 100 g Karotten
- 1 Stange Porree
- 2 mittelgroße Zwiebeln
- 300 g mehligkochende Kartoffeln
- 100 g geräucherter Bauchspeck
- 20 g Schweineschmalz
- 1 TL gehäufter Majoran
- 2 Stängel Petersilie
- 2 Liter Wasser
- 8 leicht gehäufte TL Gemüsebrühepulver
- Salz und weißer Pfeffer
The preparation is as follows: First, the peas are washed and the potatoes are diced. The lard is heated in a large pot before the diced pancetta is added. This is lightly fried, followed by the onions, which are sautéed until translucent. Then celeriac, carrots and leek are added to be briefly fried. The remaining ingredients follow as everything is brought to the perfect consistency in a simmering water bath.
Tips and variations
The stew becomes particularly tasty when refined with fresh herbs. For example, you can only add parsley at the end of the cooking time to preserve the aroma. If you like it particularly refined, you can add lemon juice for a fresh note or replace the bacon with smoked tofu if you want it to be dairy-free.
