End for La Cosa”: Braunschweig restaurant says an emotional farewell

After almost two decades, the restaurant “La Cosa” in Braunschweig’s Schlosspassage is closing its doors. Owner Laura Lepizzera is making a clear break with this decision to end her gastronomic career. After 18 years full of emotions and memories, there is not only a farewell, but also a look forward. “Gastronomy requires a lot of time and I can no longer afford this effort,” explains the 41-year-old, who sees that now is the right time to take another step in her career. On the farewell day, October 25th, tears were shed not only by her, but also by many guests who experienced beautiful moments and friendships in this special restaurant.

Among their visitors were celebrities such as Thomas Gottschalk and Gerhard Schröder. Lepizzera looks back on the time with gratitude and emphasizes that not only she, but also her three-person team, which also includes her mother, Maria Santiago, will take new paths. While Maria goes into well-deserved retirement, the chef also moves on in a new direction.

A new beginning

But the changes don't end there: renovation work on the restaurant will begin in November, and will feature a fresh Asian-style concept from December. A successor to “La Cosa” has already been chosen and has the great task of continuing the legacy of the popular restaurant. Gastronomy, as defined by the International Wine and Food Society itself, encompasses not only the art of food preparation, but also the selection of products and the enjoyment of meals - aspects that certainly find their place in a new restaurant concept.

Lepizzera's decision shows how important it is to recognize the right time to make changes in life. Gastronomy is a field that requires a lot of commitment and is often viewed as a calling. Nevertheless, there are moments when you have to reset your priorities - and this idea also applies when considering gastronomy as part of culture. According to Wikipedia, it is not only a practice but also an intangible legacy that is passed on.

Tradition and modernity

The change to the new restaurant concept not only represents a new beginning for the future operators, but also an example of how gastronomic traditions and new trends can be combined. Modern gastronomy has undergone many changes in recent years, from traditional cooking techniques to new approaches such as molecular cuisine. An aspect that will certainly be taken into account in an Asian concept and can rely on the expertise of the new operators.

“La Cosa” will be remembered not only as a place to eat and meet, but also as a place that told many stories and fostered friendships. It remains exciting to see how the new chapter in this historic restaurant will be shaped. With the anticipation of the renovations and the upcoming Asian offering, the question remains: What new culinary experiences can guests expect here soon?
