Thomas Bühner, the former three-star chef known from Osnabrück, is opening his newest restaurant “La Vie” in the heart of Düsseldorf. This is an exciting culinary curiosity that has only appeared on the gastronomic radar since the beginning of May 2025. But the expectations are already immense.

Equipped with a clear vision, Bühner relies on “categorical kitchen purism” and “radical product fetishism” in his kitchen. Timo Fritsche, the house chef, implements Bühner's creative ideas and conjures up dishes that take the guests' palates to the highest taste nuances. Particularly noteworthy are innovative combinations such as calamaretti, green tomato with Thai basil ice cream and parsnip cream, which define the character of the dishes. Unconventional desserts that incorporate vegetables and fresh ingredients are also unparalleled.

A Michelin star in record time

On June 17, 2025, just a few weeks after opening, “La Vie” was awarded a Michelin star, which is a great honor for Bühner and his team. At the award ceremony in the Palmengarten in Frankfurt, a total of 341 companies were awarded at least one star. Thomas Bühner was pleased: "It is a confirmation of our work and a thank you to the entire team, especially to chef Timo Fritsche. Our culinary focus combines the essence of French and Asian cuisine."

The restaurant offers guests two evening menus – one vegan and one omnivorous, as well as an à la carte selection. In addition, “La Vie” is now also open on Sundays for a cheap lunch, which rounds off the offering. Host Antonia Winkler and sommelier Thilo Kownatzki take care of the guests' well-being and round off the overall experience.

A look into the future

The award as a Michelin star holder underlines Bühner's return to the top of the gastronomy scene, after he already held three stars for his previous restaurant in Osnabrück from 2011 to 2018. After this successful period, Bühner devoted himself to various projects abroad, including stints in Korea, Kazakhstan, Hong Kong, Singapore, Australia and Vietnam. Now he is back and ready to inspire the people of Cologne and Düsseldorf with his creative concepts.

His innovative approach and passion for high-quality ingredients are clearly evident in the new “La Vie”. Bühner and Fritsche continually experiment with different preparation methods and fresh products to create unique taste experiences. “It's a constant process in which we always want to get better,” says Bühner, suggesting that there is still a lot to be expected here.
