In the world of fine dining, Christian Bau is a name that stands for excellence. The 46-year-old star chef runs his renowned restaurant, the Victor’s Fine Dining by Christian Bau in Perl-Nennig, and was named by the Gault&Millau restaurant guide Chef of the Year appointed. With three Michelin stars, which he has held since 2005, Bau has a firm place at the top of German gastronomy.
In his kitchen, Bau combines French haute cuisine with Japanese ingredients, which creates his very own style. Having fun with food and a relaxed atmosphere are also important to him, which is why he doesn't wear formal clothing in his restaurant. The choice of its ingredients is considered:85 percent of his dishes are based on fish and seafood,and he usually hardly uses any fats such as cream or butter.
The art of currywurst
Although he doesn't serve currywurst in his restaurant, Bau shows his love for this traditional dish through a special type of preparation that he regularly creates for his team. Every four weeks the restaurant serves a currywurst with a secret ingredient that comes as a surprise to many: Coca-Cola. To achieve the perfect sauce, he boils down two bottles of Cola to about 130 milliliters. He expressly emphasizes that only regular Coca-Cola should be used - light or zero versions have no place in his kitchen.
Bau describes a good currywurst as a work of art. The texture of the sausage, the quality of the rolls and especially the structure of the sauce are crucial for him. On his culinary travels through different cities, he is always looking for insider snack tips in order to find the best dish. This passion is also reflected in his innovative dishes.
A look behind the scenes
Christian Bau feels just as at home in Asian cuisine as he does in French. He was particularly impressed by the Japanese hospitality and the discipline of the Asians. In his almost 20 years as head chef in Perl-Nennig, he has a team of ten employees with whom he works on new creations every day. Around half of his guests come from abroad, many of them from neighboring countries as well as from Scandinavia and Great Britain. His dishes have earned a reputation in German gastronomy as being innovative.
The restaurant guide Guide Michelin certifies a total of 327 restaurants in Germany that have been awarded stars, with Christian Bau and his restaurant being among the outstanding addresses.His influence on German gastronomy is obvious, and he remains an important figure in the world of culinary delights.
