Michelin 2025: Fulda celebrates new star in gourmet heaven!

There has been a small gastronomic revolution in Hesse this year, and that doesn't just apply to the other federal states! In the new edition of the “Guide Michelin” 2025, a whopping 18 restaurants in Hesse made it onto the prestigious list. Of these, 18 have the status of one-star restaurants, including the exquisite “Christian & Friends Tastekitchen” in Fulda and the “L’étable” in Bad Hersfeld. As the Fulda newspaper reports, the “Lafleur” restaurant in Frankfurt has successfully defended its coveted two-star status.

However, the Michelin jury was also able to recognize newcomers to the circle of star restaurants. The “Sommerfeld” in Frankfurt, the successor to the former “Weinsinn”, is celebrating its first star this year. On the other hand, the gastronomic offering has suffered slight losses because the “Gustav”, which previously had two stars, had to close in 2024.

Interestingly, there are still no three-star restaurants in Hesse. Overall, the number of star restaurants has decreased from 24 in 2024 to 18, but Hessian gastronomy continues to show remarkable achievements. The Hessian restaurant guide also lists the one-star restaurants with a fine offering that takes the culinary level to the highest level. These include:

  • Christian & Friends Tastekitchen in Fulda
  • L’étable in Bad Hersfeld
  • 360° in Limburg an der Lahn
  • MARBURGER Esszimmer in Marburg
  • Ente in Wiesbaden

What is particularly pleasing is that Hesse is not only known for its culinary delicacies, but also sets an example when it comes to sustainability. The SWP highlights that seven restaurants, including the “Seven Swans” and the “Gustav”, have received the green star for sustainable cuisine.

A look beyond the borders

The entire star cuisine in Germany is showing impressive growth. In total there are now 341 restaurants with at least one star, which is a new record. The new edition of the “Guide MICHELIN” also named two new 3-star restaurants in Germany, which enrich the gastronomic landscape in Hamburg and Munich. This shows that the competition in star gastronomy never sleeps!

The focus is increasingly on plant-based cuisine and regionality, a trend that the Day ticket emphasized. The testers, who work anonymously in the restaurants, recognize the personal touch and the price-performance ratio in the kitchens and evaluate the consistent quality of the food. Gastronomy in Hesse and beyond remains an exciting field in which food enthusiasts can look forward to new taste experiences!
